It just always struck me - how he looked like my "Chef".

Yes Chef - No Chef - Thank You Chef

Chef was my buddha - with an incredible love of tasty practical food.

I especially loved the moments he would put his knife down and make a special teaching point - the finger would go up in the air or touch a piece of food - and you knew he would be giving you some juicy tip - or a lesson hard learned.

It's was a great loss to qualify ! I could have worked with him for my whole life.  He brought food to life just by talking about it.  It was like he could taste it before he did any cooking.

Every Friday morning - before anything else we would have a few congacs and short blacks - Fridays were fantasic days.  We never got drunk - just warm (and awake)  and he got 15 hour days out of us.

He knew about people.
